Both leathers achieve the same result, but what are the other differences?
SOFT leather has a tacky feel, providing natural feedback to the knife. This makes maintaining the knife's angle easier and keeps stropping more controlled. SOFT leather is coarser than MEDIUM leather. So, if you're working with just leather without pastes, this is something to consider.
MEDIUM leather is stiff and slippery, somewhat numb to the touch. However, knives tend to shed metal onto the surface of the leather, so after a short period of use, the shiny smoothness disappears, and the leather starts to feel tacky.
Leather is a consumable, but it will not wear out. This means that MEDIUM does not last any longer in use than SOFT. You must be careful while knife stropping. From my experience, I know that the knife's tip quickly leaves cut marks in high-speed stropping. So please be patient while stropping.
