Hiokami PM8O – Lightweight Chef’s Knife, 67 Layers Damascus Steel
The Hiokami PM8O represents modern Damascus steel at its finest. The blade is crafted from 67 layers of Damascus Steel with a 10Cr15CoMoV steel core. With a hardness of 60 ±1 HRC, its durability and edge retention are ensured through vacuum heat treatment and deep freeze processing.
The standout feature of this model is its light weight – the knife weighs only about 144 g. Its lightweight design makes it exceptionally easy to handle in precision tasks.
The handle combines olive wood and black buffalo horn in an Octagonal (Hakkaku) shape – a traditional Japanese eight-sided design. It offers an ergonomic grip and aesthetic elegance, making each knife unique.
The Hiokami PM80 stands out with top-class finishing: every detail, the Damascus pattern, and the handle fit reflect uncompromising craftsmanship. This knife is not a mass product but a carefully finished tool that inspires with every cut.

NOTE!
A quality knife requires the treatment it deserves. Do not wash the knife in a washing machine. After use, wash with warm water. Dry in a towel and store in a magnet or knife rack. Do not twist anything with the knife, and the general recommendation is that it not be used to cut sticks, bones, or frozen meat. This will avoid chipping the blade and breaking the tip.
