Hiokami B37 Utility – 73 Layers Damascus Steel
The Hiokami B37 series represents modern Damascus steel at its finest. The blade is crafted from 73-layer Damascus steel, with a core of 14Cr14MoVNb powder steel. It has a hardness of 62±2 HRC, and its durability and edge retention are achieved through careful heat treatment – Vacuum Heat Treatment and Deep Freeze (cryogenic treatment).
What makes this knife special is its handle, crafted from genuine Italian olive wood and finished with copper rivets. The natural material gives the knife a warm, individual look – every handle is slightly different thanks to the wood's own grain pattern – and it sits exceptionally comfortably in the hand.
The blade is hollow-ground (2.0 mm thick), which helps food release from the blade during cutting and makes the knife agile to use. The hardness level is designed to be just right: the blade holds its edge for a long time, yet is still easy to sharpen with ordinary whetstones.
The workmanship is exceptionally high quality – especially for a product in this price range. Every detail, finish and feel shows that this is not a mass-produced item, but a carefully crafted tool.
The knife weighs a light 110 g, making it agile and quick to use for smaller cutting tasks. NOTE!
A quality knife requires the treatment it deserves. Do not wash the knife in a washing machine. After use, wash with warm water. Dry in a towel and store in a magnet or knife rack. Do not twist anything with the knife, and the general recommendation is that it not be used to cut sticks, bones, or frozen meat. This will avoid chipping the blade and breaking the tip.
