Six years of development and fine-tuning were required before the first knives were in the condition to meet the goal. After several difficult decisions, both the choices of steel and the hardness of the blades were locked in.

The passion with which the handle design was approached is clearly evident in the end result. All handles fit equally well in both the right and left hand. The handles are shaped to fit both professional chefs and home cooks alike. The handle offers several different grips and certainly meets the needs of even the most demanding knife users.
